Easy Keto Chocolate Muffins

These really are the best keto chocolate muffins you will ever make! A wonderful healthy breakfast or snack and kids love them.

They taste so chocolatey and indulgent! However, they are low in carbs and in calories and high in fiber. They are also really easy to mix up with ingredients you probably already have on hand.

This recipe makes 12 muffins, 1 serving is 1 muffin.

You’ll only need a few simple ingredients to make these tasty muffins. The exact measurements are included in the recipe card below.

This recipe is kid-friendly and uses unsweetened cocoa and sugar-free chocolate chips. With only 2 net carbs per serving, if you are looking for the best keto diet bread with sweetness, this recipe is for you!

The key to making moist keto chocolate muffins is that you do not use coconut flour. Coconut flour is very dry and it will dry out the muffins. Do not substitute coconut flour for almond flour in this recipe. You will not get the same results.

Using melted butter is also key in this recipe. Do not overmix the batter. Use a silicone spoon and only beat to combine the ingredients.

These keto muffins are freezer friendly but I prefer the texture when they are fresh the best. Once completely cool, store them in the fridge, in an airtight container, for up to a week.

You can warm them very gently in the microwave on 50% power, 10 seconds per muffin, before enjoying (after removing the foil liners, of course).

These Keto Chocolate Muffins are a simple, low carb, sweet treat that are so easy to makeand loaded with rich chocolatey flavor. These really are the best keto chocolate muffins you will ever make!

Instructions

  1. Preheat the oven to 175C/350F.
  2. Line a muffin tin with muffin liners.
  3. Mix all dry ingredients (almond flour, cocoa powder, sweetener, baking powder, and salt) in large mixing bowl and stir.
  4. Add in the melted butter, beaten eggs, vanilla, and almond milk. Stir with a silicone spoon until combined, but do not overmix the batter.
  5. Stir in all but 1 tbsp of chocolate chips. Divide batter evenly among prepared muffin cups and top each with a few more chocolate chips.
  6. Bake the muffins for 20-25 minutes, until firm to the touch (mine were ready in 20 minutes).
  7. Remove the muffins from the oven. Remove each muffin from the tins immediately. Allow to cool or eat them straight away – beware of the molten chocolate chips. If you allow the muffins to sit in the tin they are more likely to crumble. The muffins will become more firm upon standing.
