Can I have strawberries on keto?
Absolutely! Strawberries are a wonderful way to add nutrition and variety to a keto diet.
You just need to be a bit cautious about the quantity you eat.
Together with raspberries and blackberries, they are amongst the fruit containing the lowest amount of carbs.
100 grams of strawberries – that’s 8 medium-sized berries – contain just under 6 grams of net carbs, according to the USDA.
Can I use frozen strawberries to make this strawberry mousse?
Yes! I prefer to use fresh, but frozen strawberries would also work wonderfully in this recipe! Simply use 1 cup of frozen strawberries in place of the fresh ones. Before use, thaw the frozen berries and process with the recipe as usual.
Place defrosted strawberries in a blender. Cover blender, then puree the berries. Leave berries in the blender and set them aside.
Can I use cream cheese instead of mascarpone?
Yes, that should be fine, but bear in mind that cream cheese has a sharper, subtle cheese taste. Mascarpone cheese is a rich, creamy cheese that usually adds a sweet flavor to dishes.
Mascarpone is not easily available always and you can use cream cheese instead. Even though the flavor might not be the same as while using mascarpone, using cream cheese works fine.
Just choose which one you personally prefer – I usually use mascarpone cheese because I love the taste of it, but it works just as well with normal cream cheese.
Ingredients to make strawberry low carb keto mousse
These are the ingredients you need to make this mousse (You can find the exact amounts needed on the recipe card at the end of this post!):
– Strawberries – Fresh strawberries would work wonderfully in this recipe, but you can also use frozen berries.
– Powdered sweetener of choice – I used Lakanto Powdered Monkfruit Sweetener, but erythritol or swerve sweetener can also be used. You can also use granulated sweetener but you need to mix it until well incorporated.
– Heavy cream – Either heavy cream or heavy whipping cream can be used.
– Mascarpone cheese or full-fat cream cheese – You can use both for this recipe!
Keto Strawberry Mousse
This Keto Strawberry Mousse is the perfect instant dessert that is sure to impress! With only 4 ingredients it's easy to put together.
Ingredients
- 1 cup heavy whipping cream
- 1 cup mascarpone cheese
- 1 – 2 tablespoons powdered sweetener
- 1 cup strawberries
Instructions
- In a large mixing bowl, add the heavy cream and beat very well, until stiff peaks form.
- Beat in the mascarpone cheese and powdered sweetener.
- In a high-speed blender or food processer blend the strawberries until smooth. I used a high-speed blender, but an immersion blender will do the trick as well.
- Add them to the mascarpone and heavy cream mixture and fold everything together until combined.
- Transfer mixture to serving dishes, cover, and refrigerate for at least 1 hour before enjoying.
- Top with more berries and chopped pecans if you want, serve, and enjoy.
Notes
How to store strawberry mousse
Store in the fridge for up to 3 days in an airtight container.
I don't recommend freezing this keto strawberry mousse.
