Instructions

  1. In a medium-size mixing bowl stir together almond flour, cocoa powder (or melted sugar-free dark chocolate chips), and sweetener. Add melted butter and mix until well combined then add the mixture to the pan. Press the crust mixture tightly into the bottom of your 9-inch springform pan. You may use the back of a small measuring cup to help firmly pack the crust into the pan. Stand sliced strawberries upright around the edge of the crust to create a border. Set aside.   2. To make the strawberry sauce, place chopped strawberries in a medium saucepan along with liquid stevia extract, and 1/4 cup water. Cook over medium heat until the berries have softened, about 5 minutes. Remove from the heat and mash with a fork or blend strawberries into a puree.
  3. Pour 2 tablespoons of cold water in a small bowl and sprinkle the gelatin over the top and let sit for about 1 to 2 minutes. Pour the gelatin mixture into the strawberry sauce and cook, stirring often, over low heat until the gelatin completely dissolved. Remove from the heat and set aside to cool slightly.
  4. In a large bowl, beat whipping cream with vanilla extract on high until soft peaks form and set aside.
  5. In another large bowl beat together the cream cheese and powdered sweetener until light and fluffy. Add strawberry puree and beat until combined.
  6. Carefully fold in whipped cream to the cheesecake filling and fold gently until evenly incorporated. Pour the filling and spread it carefully into the crust.
  7. Chill in the fridge, uncovered, until firm, at least 3 hours or overnight. Once set, carefully run a sharp knife around the sides of the pan to loosen (try not to disturb the berry border). Remove sides.
  8. For the ganache, in a medium saucepan, melt butter and unsweetened chocolate over low heat, stirring until smooth. Add powdered sweetener and vanilla extract and stir until smooth.
  9. Allow cooling about 5 to 10 minutes, until thickened but still pourable, and then pour over top of the cake.
  10. Garnish with chocolate-covered strawberries (if desired). As an alternative, you could drizzle some melted chocolate over the strawberries.
  11. Let chocolate garnish set about 20 minutes before serving and enjoy!
