A quick and easy recipe for a low carb keto blueberry mug cake ready in no time! Light, fluffy, and loaded with blueberries, this easy coconut flour-based muffin in a mug is protein-packed, low carb and 100% sugar-free, vegan, paleo, and gluten-free.
Ingredients
- 2 tbsp Coconut flour
- ½ tsp Baking powder
- 20 gr fresh Blueberries
- 2 tbsp Cream Cheese
- 1 tbsp Butter, melted
- 15-20 drops Liquid Stevia, or to taste
- 1 large Egg
- ¼ tsp Pink Himalayan Salt
Instructions
- Add the butter and cream cheese to a mug and microwave for 20 seconds. Mix with a fork.
- Add the baking powder, salt, coconut flour, and stevia and combine it with the fork.
- Add the egg and combine.
- Add the fresh blueberries, and gently combine.
- Microwave for 2 minutes.
- Flip over onto a plate or eat right out of the mug. Dust with powdered erythritol, if desired and enjoy!
