Ingredients:


Instructions:

  1. Add egg to the butter and whisk until air bubbles begin to appear.
  2. Add in stevia/erythritol, cocoa powder, heavy cream, salt, and vanilla extract, mixing until combined.
  3. Spray microwave-safe ramekins or mugs with cooking spray or line with butter
  4. Pour in batter.
  5. Place the piece of dark chocolate in the middle and spoon the remaining batter over it to cover.
  6. Place in microwave for 30-45 seconds. Every microwave is different. You want the outside of the cake slightly firm, while the middle is not yet set, that’s how you get the lava.
  7. Make sure not to overcook and the cake is still slightly uncooked so the center and top are still slightly “molten”.
  8. If you need more time in the microwave, set for 5-10 second intervals until you have the consistency of a Chocolate Lava Mug Cake.

Simply pour the batter into an oven-safe ramekin and bake it at 350 degrees for about 13 to 15 minutes. You will know it’s done because the top will be soft like a sponge.

This is really good and quick. I will make it again. I know ingredients vary, but mine came out at 270 calories. Thanks for the recipe, and I will for sure be making this from time to time when I want a quick, easy, good dessert.

The calories listed are way off, you should check your nutrition data. With one egg, 1 tablespoon of butter and 1 tablespoon of whipping cream you are already at 230 calories without counting the 2 tablespoons of cocoa or the 25 g for 100% dark chocolate which probably add another 150 calories. It is probably off by 50% and this should be closer to 380 to 400 cal for one serving.
