Easy Breakfast Keto Sausage Egg and Cheese Bites (Low Carb + Gluten-Free)
You are going to fall in love with this Keto Sausage Egg and Cheese Bites recipe. They are easy, cheesy, and delicious! Try them for your next keto-friendly breakfast or for an evening with friends and family.
Ingredients
- 1 pound breakfast sausage, you can use mild or hot
- 4 ounces cream cheese, softened
- 3 eggs, beaten
- 1 cup shredded cheddar cheese, or cheese of choice
- 1/3 cup coconut flour, I use this brand
- 1/2 tsp baking powder, I use this brand
- 1/4 tsp salt, or to taste
Instructions
- Preheat oven to 350 F degrees.
- Cook your breakfast sausage, drain and set it aside to cool slightly. You can also brown the sausage meat in a large pan on medium heat. Let it cool.
- When the sausage has cooled add it to a mixing bowl and combine with the cream cheese until there are no cream cheese clumps left.
- Make sure the sausage is not too hot before continuing as it will cook the egg when you add it in the next step.
- Stir in cheese, eggs, coconut flour, salt, and baking powder.
- When the the mixture is well incorporated then refrigerate the batter for 10 minutes. Coconut flour continues to absorb moisture so if it seems too runny it won't be.
- Grease a baking or cookie sheet and using a small cookie scoop, divide, and portion sausage balls and place onto the prepared baking sheet. I made 36.
- Bake 18-20 minutes or until golden brown.
