This delicious Low Carb Strawberry Cake sugar-free dessert is gluten-free, dairy-free, and grain-free cake with strawberry frosting. Strawberry cake was one of my favorite desserts growing up.

Sweet and pink keto strawberry cake with strawberry icing is easy to make, and just 4 net carbs per slice.

Keto Strawberry Cake Recipe:

 Prep time: 20 mins

 Cook time: 30 mins

 Total time: 50 mins

 Serves: 10


Ingredients

For Strawberry Cake:

  • 280 gr almond flour, I use this brand
  • ½ cup avocado oil, I use this brand
  • 5 eggs
  • 1 cup strawberry puree
  • 1 tsp salt
  • 1 tsp gluten-free baking powder, I use this brand
  • 1 tsp baking soda
  • 1 tsp xantham gum, I use this brand
  • 1 cup granular sweetener, I use this brand

For Strawberry Frosting:

  • ½ cup butter, room temperature
  • 4 ounces cream cheese, room temperature
  • 1 cup confectioner’s sweetener, sifted (see notes)
  • ¼ cup strawberry puree
  • ¼ cup frozen strawberries

Instructions

For Strawberry Cake:

  1. Mix almond flour, salt, baking powder baking soda, xantham gum, together.
  2. Mix Strawberry puree with Swerve, Oil, and eggs.
  3. Mix both wet and dry ingredients.
  4. Prepare baking pans with parchment paper and baking spray.
  5. Pour into prepared baking pans and bake at 350 degrees F, 180 C. for 30 minutes or until the toothpick or cake tester comes out clean.

For Strawberry Frosting:

  1. Mix cream cheese until it’s fluffy.
  2. Add butter. Mix well.
  3. Add in frozen strawberries. Mix well. The strawberries will break up into small particles.
  4. Add in strawberry puree.
  5. Slowly add in confectioner’s sugar until you get the consistency you want.

Assemble Cake

  1. Cool cake completely before removing from pan.
  2. Spread frosting over cake.

If Making a Double Layer Cake: Double Recipe. You might want to put stabilized whipped cream in between layers.


 Notes: Double Recipe for a layer cake or tiny three-layer cake.
