The carbs in cauliflower are low, making this dish perfect for any occasion including the holidays, Thanksgiving, and Christmas.
Seriously, my family loves these so much, and you won’t even feel deprived of potatoes AT ALL. This is a perfect keto-friendly solution if you miss mashed potatoes.
So, even though keto mashed cauliflower is not really potatoes, that makes it all the more interesting. Just like spaghetti zucchini makes great low-carb noodles!

How Do You Make Cauliflower Like Mashed Potatoes?
It’s actually really easy. You will need ahead cauliflower, garlic, butter, sour cream (or substitute with cream cheese), parmesan, and salt and pepper to taste.
After boiling your cauliflower, drain it very well, and then transfer the cauliflower to a food processor.
If you don’t have one, try a high-powered blender, hand blender, or just mash by hand. Then just process (or mix) the cauliflower with cream cheese, Romano or Parmesan cheese, salt, and pepper. This couldn’t be simpler!
How Many Carbs Are In Cauliflower?
One head of cauliflower has 6 total carbs. This recipe has only 1.3 net carbs per serving. Pair this dish with a juicy buttery, steak or grilled chicken to save on the remaining net carbs!
Easy Keto Cauliflower Mashed Potatoes - Mashed Cauliflower
Healthy easy keto cauliflower mashed potatoes paleo, with 5 ingredients! This low carb recipe is buttery, creamy & dense like real potatoes. This is the low carb side dish of your dreams!
Ingredients
- 1 large head cauliflower cut into florets, (about 3 pounds or 1 1/2 kg)
- 3 tbsp unsalted butter
- 3 tbsp sour cream, (or cream cheese)
- 6 cloves garlic divided, optional
- ¼ cup Romano or Parmesan cheese
- Salt and black pepper, to taste
Instructions
- Place cauliflower in a steamer over a large pot of boiling water. Steam for 15 minutes until tender. Alternatively, boil cauliflower in salted water for 10 minutes or until fork-tender. Remove and drain. Cover with a lid and set aside.
- In the same pot, heat the butter over medium-high heat. Sauté garlic until fragrant (about 1 minute).
- Blend cauliflower and garlic in a food processor on high setting until smooth. You may need to do this in batches of two or three, depending on the size of your processor.
- Transfer blended cauliflower into the pot with the garlic. Stir in the Parmesan cheese, sour cream and season with salt and pepper.
Notes
Tip: For the right texture, you only want the florets. No stems! The stems will result in a grainier texture, so leave those out. You can re-use those for other low carb cauliflower recipes. And if nothing else, you can’t go wrong with throwing them into a stir fry.
