  • First stir together dry ingredients, the cocoa powder, sweetener, and salt in a large, microwave-safe mug. This helps break up any lumps of cocoa or sweetener, which will help it mix more easily into the milk in the next step (if you are using unsweetened dark chocolate, add it after you add your low carb milk).
  • Stir in a few tablespoons of almond milk to make a smooth paste, then stir in the remaining almond milk and heavy cream.
  • Then, microwave for 1 minute. Remove the mug from the microwave, and stir. Microwave for a few seconds longer or until hot. Finally, stir in the vanilla extract.
  • Top with sugar-free whipped cream and a dash of unsweetened cocoa powder, and enjoy!

Notes

[bs_icon name="glyphicon glyphicon-heart"] Tip: This recipe can easily be made dairy-free by substituting the thick coconut milk from a can for the heavy whipping cream. I find that this adds a slight coconut flavor that I find works well with the chocolate - kind of like a Mound bar.
