Instructions

  1. Wash and dry your zucchini, cut off the ends of the zucchini and then slice it into thin strips in the shape of fries.
  2. Place the zucchini in a single layer on a paper towel-lined plate and sprinkle with salt. Let it sit for a few minutes to draw out the moisture.
  3. After a few minutes put zucchini fries in a bowl and add olive oil, Parmesan cheese, Italian seasoning, and pepper. Toss until combined.
  4. Preheat the air fryer to 400 degrees F.
  5. Put zucchini fries in the air fryer basket.
  6. Cook zucchini fries in the air fryer for 20 minutes or until cooked through but not soggy.
  7. If desired, sprinkle with additional Parmesan cheese before serving.
