These Keto Pancakes are gluten-free, paleo, and Whole 30 approved. Whew! Loaded with sweet berries and no refined sugar. Healthy with a capital H! Packed with healthy carbs and protein.

Can I eat fruit on a keto diet?


It’s often assumed that fruit cannot be eaten on a ketogenic diet. Contrary to popular belief, low sugar fruits CAN be enjoyed on a keto diet.

These low-carb pancakes with berries are the perfect example. On their own (and eaten in a very large quantity), you could argue that berries are a primary carb source.

However, when used as part of a very low-carb recipe, it barely makes a dent!

Are pancakes keto?


Regular pancakes are made with wheat flour and sugar, so no, your typical pancake is not keto. This pancake recipe however is 100% keto.

As a matter of fact, using almond flour instead of regular flour and erythritol instead of sugar drops the net carbs to a staggeringly low 1.1g per pancake – compare that with about 30-40g of net carbs on your traditional pancakes!

So if anyone asks you, can I eat pancakes on a keto diet? You now know the answer. Yes, as long as you follow this recipe of keto cream cheese pancakes!

Fluffy Keto Pancakes With Berries

Yield: 24 pancakes
Prep Time: 5 minutes
Cook Time: 5 minutes
Inactive Time: 15 minutes

These keto pancakes with berries are soft, fluffy and so easy to make, perfect for your next low carb breakfast or brunch. They are made with almond flour and are completely grain-free, sugar-free, gluten-free, and paleo-friendly. 

Ingredients

Instructions

  1. Mix all ingredients (except berries) together in a blender.
  2. Let batter sit for about 15 minutes.
  3. Place a large non-stick skillet over medium heat (about 325-350 degrees F) and spray with cooking spray. Using an ice cream scoop or a 1/4 cup measuring cup to scoop the batter into the skillet.
  4. Drop berries onto each pancake. Continue to cook until the pancakes are ready to flip. They are ready when the edges firm up and are no longer glossy. Cook for about 30 seconds more after flipping.

Notes

Tip: Berries out of season? Use frozen or swap out Lily’s sugar-free chocolate chips. When blueberries are plentiful in the summer, freeze them in small baggies to add to muffins and pancakes in the winter. No need to thaw them.
